Peg Anderson’s Southern Pecan Pralines

They take a few minutes of stirring, but these are easy, delicious candies.

2 Cups brown sugar, packed
3/4 Cup evaporated milk
2 TB. butter
2 Cups pecan halves

In a heavy saucepan, mix the sugar and milk. Using a candy thermometer, cook, stirring, to 234°. Stir in butter and nuts. Remove from heat, let stand ten minutes. Beat with a wooden spoon about 10 minutes until thick but still glossy. Drop by spoonfuls onto a pan lined with wax paper and allow to cool. Store in a tightly covered can, separating the layers with wax paper.

Yield: 2-3 dozen pralines. Prep. time: 5 minutes. Cooking time: roughly 30 minutes total.
