Restorative Justice

 

 

Jim Fetherson - Shish Kabob Marinade

This marinade works equally well for chicken or beef.

 

2 lbs. chicken or beef, cut into large cubes
8 mixed bell peppers, cut into large chunks
1 pt. cherry tomatoes
2 small red onions, cut into large chunks

Marinade:
4 cloves garlic, crushed
3/4 Cup vegetable oil
3/4 Cup lemon juice
1/3 Cup honey
1/4 Cup soy sauce
1/4 tsp. black pepper
1 TB ground ginger
1 tsp. salt
1 TB dry mustard powder

Combine all of the marinade ingredients together in a sealed container or zip-top bag, add meat and marinate at least 2 hours. Overnight is even better. Thread the meat, bell peppers, cherry tomatoes and onions onto skewers and grill. Baste with marinade while grilling.

Prep. time: 45 minutes plus marinating time
Cooking time: 6-10 minutes for beef, 10-20 minutes for chicken
Serves: 8-10
