
Jim Fetherson - Peppercorn Beef Tenderloin
Based on the recipes Jim gave us he may want to consider a career with the National Cattlemen's Beef Association.
1 4 lb. beef tenderloin
2 TB low sodium soy sauce
2 tsp. freshly ground pink peppercorns
2 tsp. freshly ground green peppercorns
2 tsp. freshly ground black peppercorns
2 tsp. ground ginger
1 1/2 tsp. ground cardamom
8 cloves garlic, crushed
Combine the soy sauce, peppercorns, ginger, cardamom and garlic to make a paste. Rub the
tenderloin with the paste and allow to marinate approximately 2 hours. Rotisserie grill
over medium heat or grill over indirect heat to desired internal temperature.
Prep. time: 20 minutes
Cooking time: 60-90 minutes
Serves: 12-14
