Rachel's Omelet
Harry's daughter, Rachel, was 6 years old when she came up with this recipe.

1 tsp. butter
2 eggs, beaten
1 TB milk
1 tsp. grated Parmesan cheese
1 pinch salt
1 pinch pepper
In a non-stick omelet pan, melt the butter over medium heat. Whisk together the eggs, milk, cheese, salt and pepper. Pour into the pan and swirl them around so that a fine layer of egg sticks to the sides of the pan. Let the eggs cook for a few minutes to set up, then rotate the pan again to redistribute any uncooked egg. When the eggs are fully cooked and the edge starts to pull away from the pan, fold three of the edges in to make a little pocket.
