Fiscal Responsibility
Aunt Pat's Pizza Meat
This is a braised meat dish, so you can use a cheaper cut of meat, like round steak, but you should pound it a bit. The braising will help tenderize it also.

1 lb. veal or round steak (we used round steak)
3/4 Cup Italian bread crumbs (if you make them yourself, make sure there's plenty of garlic, grated cheese and parsley)
4 TB olive oil, divided
1 16 oz. can tomatoes (crushed are good)
1 8 oz. can tomato sauce
2 tsp. salt
2 tsp. pepper
1 tsp. dried basil
3 TB dried oregano (it has to taste like pizza!)
1 tsp. sugar
1-2 large onions, diced (about 1 1/2 Cups)
4 oz. Italian cheese slices (sharp provolone or Romano are good)
Grated Romano cheese and oregano
Preheat the oven to 350°. Pour 2 TB of the olive oil into a wide, shallow bowl. Coat the meat in the olive oil and then coat in bread crumbs. Heat the remaining oil over medium-high heat and brown the meat, about 2-3 minutes per side. Place in a baking pan. In a medium saucepan, mix together the tomatoes, tomato sauce, salt, pepper, basil, oregano and sugar. Cook over medium heat, stirring and mixing well, about 5 minutes. Spoon the sauce over the meat. Place slices of cheese liberally over the sauce. Spread the onions over the cheese. Shake a little grated Romano cheese and oregano over the top. Cover with aluminum foil and bake at 350° for about 45-60 minutes (the sauce should be bubbling).
