Potato Latkes
Yum—tasty potato pancakes. What could be better at any holiday meal?
2 Cups peeled/shredded potatoes (remove as much moisture as
possible by squeezing with paper towels)
1 TB grated onion
3 large eggs, beaten
2 TB all-purpose flour
11/2 tsp. salt
1/2 Cup oil
In a roomy bowl, mix together the potatoes, onion, eggs, flour and salt (don’t let the mixture sit about, it should be cooked right away). Heat the oil in a large skillet. Place large spoonfuls of the potato mixture into the hot oil, pressing down to form patties approximately 1/2 inch thick. Brown on both sides, about 5 minutes, and drain. Serve hot, with applesauce, sour cream and chopped green onions on the side.
Prep. time: 15 minutes
Cooking time: 10 minutes per batch
Yield: about 8 latkes
