Santa Dave Christopherson has brought the magic of the
holidays to the hearts ofchildren and parents for 15 years.

Whole Wheat Banana Bread

 

An easy and delicious treat from Santa Dave.

1/2 Cup (1 stick) butter or margarine
1 Cup sugar
2 eggs, slightly beaten
3 medium-sized ripe bananas (1 Cup mashed)
1 Cup all-purpose flour (sift before measuring)
1/2 tsp. salt
11/2 tsp. baking soda
1 Cup whole wheat flour
1/3 Cup hot water
1/2 Cup chopped walnuts or pecans

Melt butter and blend in sugar. Mix in beaten eggs and mashed bananas, blending until smooth. Sift all-purpose flour again with salt and baking soda. Stir in whole-wheat flour. Add dry ingredients alternately with hot water. Stir in chopped nuts. Turn into a greased 9x5" loaf pan. Bake in a moderately slow oven (325°) for 1 hour and 10 minutes. Check for doneness at 45 minutes if baking smaller loaves.*
* We found for holiday gift-giving, simply double the recipe for a yield of eight mini loaves (we used 4x2" paper mini loaf molds). Bake for 55 minutes to 1 hour. Bread is done when toothpick inserted into middle comes out clean.
Dave started long ago in 1966 with a recipe from the Sunset Cook Book of Breads and adjusted and adapted his way to a family favorite everyone loves .

Cooking time: 50-70 minutes
Yield: 1 loaf
