Heidi's Healthy Honey Cookies

These cookies taste great — don't just try them because they are "healthy." You'll agree they taste great in
spite of that!
1 1/2 Cups flour
1/4 Cup ground flax seed (most good grocers have this by the flour or health food)
1 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1 Cup applesauce
2 TB butter, softened
1/2 Cup honey
1/2 Cup brown sugar
1/4 Cup sugar
2 eggs
2 TB milk
2 tsp. vanilla extract
2 1/2 Cups oatmeal (old-fashioned or quick)
2 Cups semi-sweet chocolate chips
1 Cup chopped walnuts (optional)
Preheat oven to 375°. Combine the flour, flax seed, baking soda, salt and cinnamon in a small bowl. In
a large bowl, beat the applesauce, butter, honey and sugars together until well blended. Beat in the eggs,
milk and vanilla. Gradually beat in the flour mixture. Fold in the oatmeal until blended. Fold in the chocolate
chips and nuts. The dough will be moist. Drop by the tablespoon onto lightly greased or parchment paper-lined
cookie sheets and bake 10-11 minutes for chewy cookies or 12-14 minutes for crisper cookies. These cookies
firm up very nicely after a day if you can restrain yourself from eating them all fresh out of the oven.
Prep. time: 15 minutes
Baking time: 10-14 minutes per batch
Yield: 4-4 1/2 dozen
