Awesome Fish Wraps

 

1 8-inch flour tortilla
2 eggs
1 tsp. butter
1/4 small onion, very finely diced (1-2 TB)
1/4 bell pepper, very finely diced (we used red)
2 TB fish, cooked and flaked (trout and salmon are great - leftovers work well)*
2 TB shredded cheese of choice
2-4 TB salsa, optional

In a non-stick omelet pan, melt the butter over medium heat. Whisk the eggs. Pour into the pan and swirl them around so that a fine layer of egg sticks to the sides of the pan. Let the eggs cook for a few minutes to set up, then rotate the pan again to redistribute any uncooked egg, lifting the egg up with a spatula to let uncooked egg run underneath. Sprinkle the onion, pepper and fish over the eggs and remove from heat. Sprinkle the cheese over the top and cover the pan to let the cheese melt, 1-2 minutes. While the cheese melts, warm the tortilla in a low oven or the microwave. Slide the eggs out of the pan onto the tortilla. Roll up like a wrap or taco. Cut in half and dip in salsa if desired.

*We sprinkled our fish with thyme and lemon pepper and baked at 375° for 15-20 minutes.
