One Town: Wasilla

Tuscan Halibut

This recipe from Sandy is very versatile. She suggests substituting salsa for the tomatoes or adding some chopped bell pepper.

Tuscan Halibut

 

4 8 oz. halibut steaks
4 sheets aluminum foil
2 15 oz. cans great Northern or cannellini beans, drained and rinsed
2 medium tomatoes, chopped
2 TB finely minced onion
4 TB pesto (available in the produce section)
4 tsp. lemon juice
2 tsp. lemon pepper
grlic powder, to taste
4 lemon slices

Preheat oven to 450°. In a roomy bowl, combine the beans, tomatoes, onion and pesto. Mix well. Divide evenly among the 4 sheets of foil. Top each with a halibut steak. Drizzle each steak with a tsp. of lemon juice. Sprinkle evenly with lemon pepper and garlic and top each steak with a slice of lemon. Fold up the packets, being sure to leave some "breathing" space, and place on a cookie sheet. Bake at 450° for 15-20 minutes. Excellent with brown rice.
