Heart Healthy Pancakes

Stacey likes to serve these with warmed sugar-free syrup or warmed natural peanut butter.
1 1/2 Cups old fashioned oats (not quick), ground up in a blender
1 1/2 Cups whole wheat flour
1/4 Cup Splenda or sugar
1/2 tsp. salt
1/2 tsp. baking powder
1 tsp. baking soda
2 TB flax seeds, ground (they can be purchased ground or you can grind your own)
2 egg whites (or 1/4 Cup liquid egg whites)
5 TB applesauce
1 1/2 Cups buttermilk
chopped nuts (optional)
chocolate chips (optional)
Add all of the ingredients, except the nuts and chocolate chips, to a large bowl. Mix well with a
whisk. Pour onto a preheated griddle or pan. Sprinkle some nuts and/or chocolate chips onto the
pancakes in the pan before flipping them over. The pancakes should take about 1-2 minutes per side.
Prep. time: 10 minutes
Cooking time: 2-4 minutes
Yield: 6 1/2-cup sized pancakes
