Simple Split Pea Soup

Hearty soup that’s a meal in itself—perfect on a rainy day.

1 1⁄2 Cups yellow split peas
4 1⁄2 Cups water
1⁄2 tsp. turmeric
1 1⁄2 tsp. salt
1⁄4 Cup olive oil
1 TB cumin seeds
1⁄4 tsp. crushed medium red
hot pepper flakes

Wash the split peas in a sieve until the water runs clear. Place in a pot with the water and turmeric. Bring to a boil and simmer on the lowest heat for 1 hour. Mash with a potato masher to give a smooth consistency. Add the salt (to taste) and keep warm. In a small saucepan or frying pan, heat the olive oil on medium and add the cumin and crushed peppers. Do not have the oil too hot—3 minutes or so of cooking will flavor the oil, then stir the oil and spice mix into the soup. Serve with salad.
